Once regarded as one of the most magically powerful trees, elder is an absolute favorite and its flowers are the scent of early summer. Elderflowers grow in our hedgerow at Long Table Farm. They have an amazing floral, fruity flavor somewhere between honey and pears that goes well with both sweet and savory recipes. You can use elderflowers in herbal teas, tonics, and baking. Some enjoy infusing the flowers in vinegar and they can even be battered and fried for pancakes. Elderflowers make an incredible syrup/cordial for drinks and cocktails!
